Easy, Make Ahead Autumn Breakfasts

We hate to admit it, but we can’t help but let our morning routine get a littttttle lax around this time of year. The sun takes its sweet time rising, we’re often leaving the house while its still dark out and we tend to rely too much on that first cup of coffee to function like a normal human adult. Mornings can be rough, but these breakfasts will fill you up and help you navigate your morning with a little more grace!

Chia Pudding 

Surprisingly simple to make, this filling pudding will feel like having dessert for breakfast! You’ll need 4 tablespoons of chia seeds, 1 cup almond milk (we prefer unsweetened), and your choice of sweeter. Honey, agave or stevia will do. Whisk them together and separate into two refrigerator safe jars and place them in the fridge overnight. When you wake up, you’ll have breakfast ready for the next two days! Simply add your choice of dried or fresh fruit and chopped nuts.

Pumpkin Scones + White Chocolate Scones 

We may be a bit biased, but our scones are definitely a breakfast force to be reckoned with. Choose from two different flavors: seasonal pumpkin or cranberry white chocolate. One reviewer said, “I love the Cranberry White Chocolate scones. They’re really good. I [re]heat them in the microwave and have one with a coffee after the kids have gone to school. My treat for the week. … unless we’re having the Beetnik cheesecake, which are even better!” (Well, shucks! We’re blushing over here!)
