Chicken Caesar Salad

In this recipe, we make our regular Caesar salad dressing and toss it with pieces of chicken and finish with grated Parmesan cheese.  For variety, try our Southwest spin.

Caesar Salad Dressing

Ingredients (4 servings):

  • 2 garlic cloves
  • ½ tsp of anchovy paste
  • 1 tsp of Dijon mustard
  • 2-3 drops of Worcestershire sauce
  • 1 TBSP fresh lemon juice
  • 1 egg yolk
  • ¼ cup good quality olive oil
  • salt & pepper


Make a paste of the garlic using a mortar and pestle, or by finely mincing the garlic.  In a small bowl, whisk the garlic paste, anchovy paste, Dijon mustard, Worcestershire sauce, lemon juice and egg yolk.  Slowly steam in the olive oil while constantly whisking.

Top with Beetnik cage free chicken breast. Reheat chicken per instructions and cut into pieces.  Toss salad dressing with Romaine lettuce and chicken pieces.  Finish with grated Parmesan.
