Chicken With Caper and Sage Sauce

Serves 4

4 Beetnik chicken breasts or thighs

  • Caper and sage sauce
  • ½ cup red onion, finely diced
  • 2 TBSP drained capers, diced
  • 1 TBSP fresh sage, minced
  • 2 TSP lemon rind, julienned
  • 1 TBSP lemon juice
  • 2 TBSP olive oil
  • 2 TBSP fresh parsley, minced
  • ¼ TSP black pepper, freshly ground
  • salt to taste
  • 2 TBSP chicken stock

Mix all ingredients in a bowl.  Serve with hot chicken.
