Cod is a delicious, sturdy, white-fleshed fish that we source from the Pacific Northwest at Beetnik, where it is considered a sustainable fish. Cod is a very versatile species of fish that can pair well with full flavored sauces. Our local farms are just starting to harvest the first peppers of summers, and we thought you’d enjoy this combination.
INGREDIENTS (serves 4)
- 2 TBSP olive oil
- 1 small onion, finely diced
- 1 TSP garlic, minced
- ¼ cup ham, finely diced
- 1 small red bell pepper, finely diced
- 1 small yellow bell pepper, finely diced
- ½ small Serrano pepper, seeded and finely diced
- 2 tomatoes, peeled, seeded and diced
- 1 TSP fresh thyme leaves, finely diced
- ½ cup red wine
- 1 TBSP fresh parsley, finely diced
- Espelette pepper
- 2 tablespoons grape seed oil
- 4 Beetnik Cod Filets
- 2 sprigs thyme
- salt & pepper
Heat olive oil in a heavy bottomed pan over medium-low heat; add onion and cook until tender. Add garlic and continue cooking 1 minute; add the ham and peppers. When the peppers are soft, add the tomatoes and thyme and simmer, over low heat for 15 minutes, stirring occasionally. Add the red wine and cook on low heat for another 10-15 minutes. Stir in the chopped parsley and season to taste with salt, pepper and Espelette pepper.
Heat a sauté pan until very hot, then add the grape seed oil. Season the cod on both sides with salt and pepper. Add the cod to the pan along with the thyme and garlic, lower the heat to medium and sauté until the fish is golden brown on the bottom, about 6 minutes. Turn the fish over and finish cooking for another 2-3 minutes until just cooked through.
Plating: Spoon the pepper sauce onto plates, place sautéed cod in the center and serve immediately.
