1. Tropical Meatballs

It’ll feel like a warm holiday getaway at your house. We love simple slow cooker meatball recipes using frozen meatballs. And that’s exactly what we have here. One of our Beetnik family go-to’s.

What You’ll Need:

  • 16 oz. of meatballs
  • ½ c. soy sauce
  • ⅓ c. brown sugar
  • ½ c. water
  • 1 c. crushed pineapple
  • 2 Tbsp. vinegar
  • ½ tsp. salt
  • 1 Tbsp. corn starch
  • 2 Tbsp. cold water
  • Fresh cilantro and sesame seeds

Cooking Directions:

  1. Prepare meatballs according to the directions on the package.
  2. In a medium saucepan, combine soy sauce, brown sugar, water, crushed pineapple, vinegar, and salt. Bring that to a boil.
  3. Whisk together the corn starch and cold water.
  4. Add that mixture to your boiling sauce and stir to thicken. Simmer until meatballs are ready.
  5. Serve meatballs over rice, quinoa, or noodles. Top with your tropical sauce. Add fresh cilantro and sesame seeds. (Sometimes, we even add toasted coconut and cashews as toppings!)

What’s better than one favorite? Three favorites! Meatballs, beer, AND barbecue. This is so simple with only four ingredients. It’s a great game day appetizer or birthday party munchie.

What You’ll Need:

  • 32 oz. of meatballs
  • 1 ½ c. barbecue sauce
  • ½ c. beer
  • 2 thinly sliced jalapenos

Cooking Directions:

  1. Prepare the meatballs as directed on the packages.
  2. In a medium saucepan, combine your barbecue sauce and beer of choice. Heat thoroughly.
  3. Then add the prepared meatballs. Stir to coat.
  4. We recommend adding the jalapeno slices for a kick. But if that’s not your speed, add cheese instead. Or they’re great simply in the sauce!

3. Meatball Sandwich Casserole

Serve this with a round of vegetable sides or a salad for a spectacular weeknight meal. It makes a pretty large serving, so it’s great for crowds. Halve this easy frozen meatball recipe if you’re not serving 8-10 people.

What You’ll Need:

  • 32 oz. of meatballs
  • 4 c. tomato sauce
  • 1 loaf artisan bread (slice into ½ in. thick pieces)
  • ⅛ c. olive oil and garlic powder, onion powder, and salt (to taste)
  • Optional: 1 tsp. Crushed red pepper
  • 1 c. finely shredded mozzarella cheese
  • 1 c. finely shredded Italian-blend cheese
  • ¼ c. finely grated Parmesan cheese
  • ¼ c. parsley

Cooking Directions:

  1. Preheat the oven to 400°F.
  2. Place your already prepared meatballs in a 9×13 in. casserole dish. You’ll want to leave room for the garlic bread to line the perimeter of the dish.
  3. Evenly distribute the tomato sauce over the meatballs.
  4. Brush olive oil over bread slices. Add garlic powder, onion powder, and salt to taste.
  5. Arrange the bread slices (standing upright) around the coated meatballs. The slices should all touch the edge of the casserole dish.
  6. Add the crushed red pepper if you wish. Then sprinkle on the cheese. Be sure the bread gets covered, too.
  7. Finally, sprinkle the parsley over everything.
  8. Bake for 15-20 minutes. The garlic bread should be toasted.

4. Grilled Meatball Kabobs

Bet you didn’t see that one coming, did you? We like serving up easy, out-of-the-ordinary dinner recipes with frozen meatballs. More barbecue sauce (just in case you had some leftover from the Beer and BBQ Meatballs).

With your grill ready to go, you can make these in 15 minutes. Awesome! This serves about 4 people, so double-up if the party is larger. Or if you’re really hungry.

What You’ll Need:

  • 16 oz. of meatballs
  • 1 c. barbecue sauce
  • 2 red, orange, or yellow bell peppers (cut into 1 in. pieces)

Cooking Directions:

  1. Thread your thawed meatballs onto skewers, alternating pepper-meat-pepper-meat. Peppers should be at both ends of your soaked skewers or metal skewers. Aim for about 4 or 5 meatballs per skewer.
  2. Place these on the grill over medium heat.
  3. Brush on a little barbecue sauce once every minute.
  4. You’ll grill the kabobs for about 8 minutes. The meatballs should be heated through, and peppers should boast a light char.
