Gluten Free Fish & Chips with Homemade Tarter Sauce

We loved this extra healthy and gluten free take on fish & chips, a classic pub dish. Instead of serving it with chips, we chose to sauté a side of snap peas for optimal crunch and flavor. We paired it with a homemade tarter sauce to bring out the flavor in the cod.

Ingredients

Fish

  • 2 Fillets Beetnik Wild Caught Cod
  • 1/2 cup coconut milk
  • 1 tbsp Sriracha sauce
  • Corn Startch
  • 1/2 cup Beetnik Gluten Free All Purpose Flour
  • 1/2 cup club soda

For tarter sauce

  • 1 cup mayonnaise
  • 1 tbsp finely chopped onion
  • 1 tbsp sweet pickle relish
  • 1 tbsp Apple cider vinegar
  • 1 tsp fresh lemon juice
  • 2 tbsp fresh chopped dill
  • Salt and pepper to taste

Marinate the thawed cod in the coconut milk and 1 tbsp sriracha sauce. Create the batter with 1/2 cup Beetnik GF baking mix 1/2 C club soda. Mix together and let rest a couple of minutes. Dredge the cod in a small amount of corn starch then gently dip into batter. Shallow fry in coconut oil for a few minutes on each side until golden brown. Serve with sautéed snow peas in a teaspoon of coconut oil, Beetnik twice baked potato and home made tartar sauce.
