Gluten Free Spring Rotini Salad for Celiac Awareness Month

It’s Celiac Awareness Month and we’re posting our favorite gluten free recipes in order to spread awareness. We love cooking and make sure to include something for everyone at our table. This gluten free pasta is a great addition to your spring and summer cookouts!

Ingredients:

  • 1 package Beetnik Rotini
  • 1 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 5 garlic cloves, diced
  • 2 cups flat leaf parsley
  • 1/4 cup fresh oregano
  • 3 tablespoons fresh thyme
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1/2 orange bell pepper, diced
  • 1 tomato, diced

 

Method:

Add ingredients from olive oil to red pepper flakes to a blender and blend until herbs are chopped fine. Set aside for a few hours in the fridge to allow flavors to develop. Prepare pasta.

Toss all ingredients together.
