The Beetnik family is growing! We had a great baby shower to celebrate one of our Beetnik’s this week, and this show stopping recipe was a hit. We’re taking advantage of our local Texas peaches while we can and this salad was a clear winner. This recipes come to us via Lauren Perkins, our Senior Vice President of Encouragement, who found it in Austin Woman Magazine. Thanks for sharing, Lauren!
Beef & Marinade:
- 2 packages of Beetnik’s Grass Fed Tenderloin Tips
- 1 tbsp oyster sauce
- 2 cloves garlic
- 1 1/2 tsp sugar
- 1/2 tsp freshly ground pepper
- 2 tbsp lime juice
- 2 tbsp rice vinegar
- 2 tbsp light soy sauce (you can use Tamari for a gluten free option)
- 1 tbsp sugar
- 1/2 jalapeno chili, seeded and diced
- 3 cups mixed greens
