When it comes to blue cheese, a little can go a very long way. Take this sauce for instance: it’s bold, assertive and yet subtle enough to avoid overpowering the creamier elements of our organic, grass fed tenderloin. Top your steak with it or serve as a dipping sauce!
- 1-2 Beetnik Organic Grass fed Tenderloins
- 1 clove minced garlic
- 1 tbsp butter
- 1/2 cup heavy cream
- 6 oz crumbled blue cheese
- fresh ground pepper
Preheat the grill to medium high heat. Season steak with olive oil, salt and freshly ground pepper. Grill for about 3 minutes on each side, or to your desired level of doneness. Let rest while preparing sauce. Sauté the clove of minced garlic in the butter and add the heavy cream. Keep on low – and keep an eye on it! Do not boil or the sauce will break apart. Add 6 oz of crumbled Bleu Cheese and fresh ground pepper and stir. Once ready, garnish with fresh thyme and enjoy!
