Since we’ve gone over the basics of grilling your favorite piece of fish, you’re now ready to try out one of our favorite, four ingredient meals. We love the flavor the grill gives this fish – it really adds to the overall richness of the halibut.
- 4 wild caught halibut fillets
- 1 1/2 cups fresh basil
- 1 large shallot, chopped
- 1/2 cup grass fed & unsalted butter, room temperature
Preheat the grill. We used a food processor to finely chop the basil and the shallots, but this can be done by hand. We mixed in 2 tablespoons of the butter at a time in until it was perfectly blended. Season with salt.
Rub a bit of oil onto the halibut fillets. Place skin side up, diagonally on the grates of the grill. Grill for 3-4 minutes, flip and grill for another 3-4 minutes, until the center is almost opaque. We left the butter off until we found out everyone’s preference, but as soon as we got the butter go-ahead we put placed a small dollop atop each fillet. Enjoy!
