We decided to celebrate National Chili Day with a bit of a Texas twist – a Frito pie! Not known for it’s particularly healthy attributes, the Frito pie made it’s debut in the 1940s, when an inspired citizen of this fine country decided to mix their chili with their bag of Fritos, leaving us with this delicious, not-very-nutritious concoction.
Nancy, our Test Kitchen chef, made this dish as healthy one can make a Frito pie: all organic grass fed beef chili, organic cheese and grown from the garden onions. Oh, and Fritos.
If you’re looking for a more organic version of this corn treat, we recommend either Trader Joe’s Organic Corn Chip Dippers or baking your own. This recipe from the blog Eating Rules came highly recommended!
Simply cut open your bag of Fritos, add Beetnik’s grass fed chili and your choice of toppings and enjoy!
