We know cooler months are coming, so we’re going out with a watermelon shaped bang! The crunch of the jicama blends wonderfully with the softer, sweeter watermelon. This dish can seriously be summed up with one word: refreshing! It does not get any more refreshing than jicama and watermelon. Oh, and did we mention the addition of mint? Mint, quite possibly the most refreshing herb ever in the history of herbs? Yep, the hydrated fruit gang is all here!
- 2 cups watermelon, cut into cubes
- 1 jicama, peeled and sliced
- 1/4 cup freshly squeezed orange juice
- 1 tsp orange zest
- 1 tsp lime zest
- 1/4 cup lime juice
- 3 tbsp mint, thinly sliced. Chiffonade tutorial can be seen here.
Combine the orange juice, lime juice, both zests into a bowl. Add the jicama and watermelon, stirring gently. Add the thinly sliced mint and chill for about 45 minutes. Stir again and serve.
