Juicy Grilled Chicken Breast with Lemon and Thyme

This recipe hits all the major requirements we have in a weeknight meal: 5 to 6 ingredients, quick cooking time, fragrant spices and a tons of flavor. It’s simple to bring together and is perfect when served with green, leafy vegetables or side salad.

You can make the chicken spicier by adding in extra red pepper and letting it marinade for a couple of hours.


  • 2 Beetnik Organic Chicken Breasts
  • 1 1/2 tbsp lemon juice
  • 1/4 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • 1 clove minced garlic
  • 1/4 cup olive oil
  • salt & pepper, to season


Clean the grill and oil the grates. Heat the grill. While the coals are warming up, combine the lemon juice, thyme, red pepper flakes, garlic, salt, pepper and oil. Mix well. Drop the chicken into the liquid and make sure it covers the entire piece of chicken.

Once coated with the mixture, grill the chicken on indirect heat, 5-6 minutes on each side. Make sure to check with a meat thermometer, as we want it to be 165 F.
