Perfect on a warm day, this popular treat is both refreshing and super delicious! It’s the first thing we think of post-grilling session and we love slicing it up and sharing with our loved ones. We understand that people from all walks of life have different food allergies and nutritional requirements, so we set out to create a special pie recipe so that all of our guests feel welcome at our table.

- ¼ cup of Beetnik’s Gluten Free All Purpose Pancake and Cake Mix
- 4 oz cold butter (or one stick), diced
- 1 egg
- 1/8 – ¼ cup water
- 3 oz shredded coconut
- 24 oz (or 3 cups) sweet condensed milk
- ¾ cup lime juice
- Lime zest from 2-3 limes
- ½ cup sour cream
Preheat oven to 350 degrees. Combine Beetnik’s Gluten Free All Purpose Pancake & Cake Mix with coconut. Dice the butter and rub into the mixture. Mix in the egg and water. Pulse in food processor or mix well. Add egg. Pour in enough water so that the dough reaches pastry consistency.
Cool the dough in fridge for 15-30 minutes. After it cools, roll it out and place into a greased 9 inch pie tin. Use a fork to press the dough into the tin. Place in oven for 10 minutes.
While the crust is baking, it’s time to make the key lime filling!
Combine milk, lime juice and sour cream. Mix well, until it is a creamy consistency.
Remove pie crust from oven and sprinkle lemon zest onto the crust.
Pour the filling into the pie crust and bake for another 10 minutes. Make sure to watch the last couple of minutes, we don’t want the top of the pie browning. (If using small tins bake for 6-8 minutes)
Remove pie from oven and let cool in refrigerator before serving.
