Yes, you read that title correctly. Peanut butter, oats and honey are all you need to make these nutrient dense, protein packed wonder bars! The perfect fueling snack, these oatmeal bars are a great homemade substitution for store-bought energy bars and drinks.
Have you ever heard the term “stick to your ribs”? Oatmeal may be a naturally low calorie food, but it’s high levels of fiber and low fat content make it a great choice when you want to feel full longer without feeling too heavy in the stomach.
The combination of Beetnik’s Steel Cut Organic Oatmeal, natural peanut butter, and organic honey lead to a boost in energy and can help jump start your day with just a couple bites! They make a great breakfast and pre-workout snack. Try one about 45 minutes before a workout and your body will quickly absorb the nutrients – just in time to optimize your workout!
- 1 cup all natural, organic peanut butter (crunchy or creamy!)
- 1 cup raw, organic honey
- 3 packets Beetnik’s Steel Cut Organic oatmeal
Set aside your oats in a large bowl. In a non-stick saucepan on low heat, combine the peanut butter and honey. Make sure the heat isn’t too high, as peanut butter can burn quickly. Mix until the consistency is smooth and fluid. Pour the mixture over the oats and mix until the oats are evenly coated. Grease your favorite 8″ pan with your choice of oil (Beetnik tip: coconut oil spray works very well). Spread the oats and cover with plastic wrap. Refrigerate overnight (or for about 6 hours if you can’t wait that long!) Once ready, cut into squares and share. (Or keep them all to yourself, we won’t judge!)
