Juicy Grilled Chicken with Lemon and Artichoke Sauce

Quite possibly one of our favorite weeknight meals, this chicken breast with lemon and artichoke sauce is easy to prepare quickly, but delicious enough to impress guests.




Carefully chop and dice the shallot and place it in a small, heavy pan at med-low heat. Let the shallots sweat and add a cup of low sodium chicken broth, stirring slowly. Allow the broth and shallots to simmer. (You can use fresh artichokes, but depending on the amount of time you have on hand, this can be very time consuming. We like using organic, pre-cut and cleaned artichokes in vacuum sealed packs.) Slice and add to the broth, stir. Add lemon zest and squeeze the juice of lemon to the pan. Stir and let simmer.

Season chicken breast with salt and pepper. Cook to your liking and place on a plate. Pour sauce over the chicken and serve immediately.
