Organic Curried Chicken

Trust us, this is one of those recipes you find yourself day dreaming about. You’ll definitely bring to work the next day for the sole purpose of showing it off to your co-workers. “Oh this? Just something I whipped up!” The unique blend of spices, curry powder and tomato brought us some serious food joy. It’s a delicious meal that can be enjoyed for dinner and then easily packed for a lunch the next day! No fighting over who gets to bring the leftovers!


  • 2 Beetnik Organic chicken breasts, cubed in 1 inch pieces
  • 1 1/2 Tbsp olive oil
  • 2 Tbsp Tomato paste
  • 1 Tbsp corn starch or tapioca flour
  • 6 oz diced onion
  • 1 minced clove of garlic
  • 1 tsp fresh minced ginger
  • 1 tsp paprika
  • 2 tsp curry powder
  • 1 tsp chili powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Cup chicken broth


Pat chicken dry and season with salt and pepper. Heat oil in a medium saucepan. Brown the chicken, turning it over so that it browns on each side. Add onion, garlic and ginger to soften. Add tomato paste, remainder of the spices and corn starch. Cook for 1 minute then slowly add chicken stock. Cover and cook for about 30 minutes until tender.

Serve with condiments of your choice: peanuts, chopped scallions, coconut, currents, olives and chutney, rice or quinoa!
