Creating a meatball that was both gluten free and paleo was no easy task. Traditional meatballs typically include breadcrumbs, as they absorb many of the natural juices created during cooking and will often release that moisture back into the meat. This results in a “juicy” meatball. Was it possible to create a juicy meatball with no breadcrumbs? We decided to find out!
We began out meatball experimentations back in June of 2013. You can see our first samples in two separate blog posts. It’s been a work in progress, but we’ve finally created a recipe that our loyal Beetniks know and love!
100% organic, we want our nutrition labels to be recognizable. All of our ingredients can easily be found in your kitchen cupboard! You’ll see things like onions, almond flour, garlic, fennel seed and paprika. Our sauce is made of organic tomato, basil and oregano. We use organic zucchini and carrots and our meat is 100% grass fed and finished. Antibiotic free and absolutely no hormones are used in our beef.
The best thing about our meatballs is that they can be dressed either up or down! Pair them with spaghetti squash or your favorite pasta – they go well with salads and can even be used in a meatball sub! According to one of the reviews, “I brought it in to work to eat for lunch, [and] it’s a lot of meat. If I bought this again, I would make it up at home to share with my family and add it to some pasta.” But don’t take their word for it! Try them yourselves!
