Organic Tenderloin with Brussels Sprouts and Cranberries

Due to it’s simplicity, we find this meal on the table more than once or twice a month — and it’s on its way to becoming a staple in our home! All you need is an organic steak, a cast iron skillet and some brussels sprouts!


  • 2 Beetnik Organic Tenderloins
  • salt and pepper
  • 1 pint brussels sprouts
  • cranberries for garnish (optional)
  • olive oil
  • 2-3 cloves minced garlic



Preheat oven to 450 degrees. Oil a cast iron or oven save skillet. Slice the brussels sprouts in half, and place them on the pan over medium-high heat and season with salt and pepper. Once the cut side begins to brown, transfer them to the oven for 15-20 about minutes.

While the brussels sprouts are cooking, place your seasoned tenderloin on the grill, over medium high heat. Let sit (don’t touch!) for 3 minutes. Flip and let sit for 3 minutes or until your desire level of doneness. Remove brussels sprouts from oven and sprinkle dried cranberries.
