We truly believe that great food comes from great ingredients – so naturally we looked for local and in season fruits when making this deliciously quick and tasty topping for any type of white fish. We used sablefish, but you can pair this with your choice of protein – it’s that good!
- 3 diced peaches, peeled, seeded and diced
- 2 cups watermelon, seeded and diced
- 2 jalapeños, seeded and finely diced
- 1 lime (zest and juice)
- 2 tbsp cilantro
- sprinkle of espelette pepper
- your choice of fish
Preheat the oven to 350 degrees. Combine the peaches, watermelon, jalapeños and lime juice. Mix well. Add cilantro and zest. Mix again. Set aside in cool place (and just try not to eat it all! We dare you!). Season your fish (try the espelette pepper!) and place it in the oven for 10-12 minutes. Let rest for 3 minutes and serve with the salsa.
