Memorial Day Sides: Roasted Corn & Feta-Watermelon Salad

A delightful addition to any BBQ, these colorful sides will cool you and your guests off in no time!

Roasted Corn Salad 

Roasting corn on a grill is a sure fire way to lock in a smokey, plump kernel. We plan to make this for Memorial Day and will be recreating the recipe for our Fourth of July celebrations.


  • Red pepper
  • half of a white onion
  • jalapeño
  • 4-5 ears of corn


Dice a red pepper, half of a white onion and a jalapeño. Squeeze a lime over the vegetables and toss. Take  4-5 ears of fresh corn from your local market and place on a grill for 15-20 minutes. Once they’re ready, carefully remove from heat and shave the kernels off. Add to the salad mixture and toss.

Watermelon, Apricot & Feta Salad


  • 1 medium sized watermelon, sliced into bite size pieces
  • 3-5 apricots
  • mixed greens
  • feta cheese
  • sliced tomatoes


Combine all the ingredients, expect for the feta cheese, and toss. Once blended, sprinkle a generous amount of feta all over. Serve immediately.
