Pesto is an Italian sauce typically made with basil, pine nuts, olive oil and grated parmesan blended together and served hot or cold over pasta, fish or meat.
In American cuisine, we are a little more relaxed about naming conventions, so this is my Roasted Red Pepper & Chipotle Pesto. Like Italian pesto, it can be served with a variety of dishes, namely hot or cold pasta, poultry, or meat.
Roasted Red Pepper & Chipotle Pesto
- 2 Roasted red peppers
- ½ cup of pecans
- 1 Tbsp Chipotle pepper
- 1 Tsp salt
- ½ cup of olive or grape seed oil
- fresh cilantro
Start by blending peppers, pecans, and salt in a blender with the motor running. Then, stream in the oil until emulsified. Add chopped cilantro.
For a vibrant salad dressing, double the oil and add 2 TBSP’s of red wine vinegar.
Pecan oil makes a nice substitute for the olive or grape seed oil if it’s available in your area of the country.
