Fall has officially arrived, fellow Beetniks! We’re getting into the spirit of the season by roasting and lightly frying up these delicious organic potatoes. They’re perfect for lazy Sundays and can easily be subbed in as an alternative to french fries or baked potatoes. We love these for breakfast, lunch, dinner and even as quick startchy snack!
- 4-5 small potatoes
- salt and pepper
- olive oil
- 3-4 sprigs of fresh rosemary
Boil the potatoes for 15 minutes, remove from liquid and smash! Sprinkle with salt and pepper and a drizzle of olive oil. Add sprigs of rosemary to the potatoes. Place in oven for 10 minutes at 400. Once finished, transfer to an oiled pan and cook for about 5 minutes on each side (or until brown). Serve them with your choice of dipping sauce and enjoy!
