Southwest Caesar Salad Dressing
Ingredients (4 servings):
- 2 garlic cloves
- ½ tsp of anchovy paste
- 1 tsp of Dijon mustard
- 2-3 drops of Worcestershire sauce
- 1 TBSP of Ancho Chile powder
- 1 TBSP fresh lemon juice
- 1 egg yolk
- ¼ cup good quality olive oil
- salt & pepper
Make a paste of the garlic using a mortar and pestle, or by finely mincing the garlic. In a small bowl, whisk the garlic paste, anchovy paste, Dijon mustard, Ancho Chile powder, Worcestershire sauce, lemon juice and egg yolk. Slowly steam in the olive oil while constantly whisking.
Reheat chicken per instructions and cut into pieces. Toss salad dressing with Romaine lettuce and chicken pieces. Finish with grated Parmesan. If you have tortillas, slice two into thin strips and sauté in oil, season with salt to taste and serve on the salad to add a nice crunch.
