Sumac Crusted Salmon with Coriander and Ginger Dressing

Posted On: March 13, 2014

Add a bit of color to your fish with ground sumac: a  spice that packs a pinch of tartness and a light, lemony flavor to your dishes. Paired with a ginger and coriander dressing, the flavors delicately compliment each other. Enjoy on a bed of leafy greens or over rice.

Sumac Crusted Salmon

  • 2 Beetnik Salmon fillets
  • 3 tbsp sumac
  • 1 tsp dill
  • 3 tbsp olive oil
  • Salt and pepper to taste

Mix together the sumac, dill, olive oil and a dash of salt in a bowl. Brush the mixture over the salmon fillets and set aside. Heat pan on medium low with your choice of oil. Cook on for 2 minutes on each side.

Coriander and Ginger Dressing

  • 3 tbsp olive oil
  • 2 tbsp ginger, minced
  • 1 tbsp coriander seeds, crushed
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • Juice of half orange

Combine all the ingredients in a bowl, swiftly stirring the mixture. Once the salmon is ready, set over a bed of leafy greens and drizzle the dressing on top.
