The Beetnik Teriyaki Salmon pairs very well with broccoli, brussel sprouts, bok choy, and snow peas, as well as various other greens. However, if you want to balance the salmon with a nice salad, try this recipe. This slaw also works as a nice appetizer with the salmon and greens.
- 1 TBSP grape seed oil
- 1/2 red onions – thinly sliced
- 1/2 cup red peppers – julienned
- Freshly ground white pepper
- 2 cups Napa cabbage – shredded
- 1 cup carrots – julienned
- Sesame oil
- 1 Tsp cilantro – finely chopped
- 1 TBSP roasted peanuts
In a sauté pan, over medium heat, add the grape seed oil. When the oil is hot add the onions and peppers, and season with salt and pepper. Sauté for 2 minutes. Add the cabbage and carrots. Season with salt and pepper. Continue to sauté until wilted, about 2 to 3 minutes. Remove from the heat and turn into a small bowl. Season to taste with the sesame oil. Cool completely. Stir in the cilantro and peanuts. Mix well.
