Oven Roasted Broccoli & Cheese

All you’ll need is about 4 pounds of broccoli, a few cloves of garlic, olive oil, lemon zest, and grated parmesan. And you know what? Basil leaves add a little something extra special to this dish. This is a family table favorite and great for picnics. Mix all the ingredients with florets. Bake at 425 degrees for 20 minutes. Add salt and pepper if you like.

Forget the traditional BLT. Say hello to a few summer favorites: beets, leeks, and tangerines (or mandarin oranges)! This sandwich is not only beautiful but also super satisfying. And it’s out-of-the-box. Your Saturday brunch crew likely hasn’t had this one before.

Roast your sliced beets with olive oil, thyme, tangerine zest, salt, and pepper for about 35 minutes at 400 degrees. Let them cool. Pair with chopped leeks and fresh tangerine bits. Toast some sourdough for a great crunch. Perfect for picnics or wedding/baby shower treats!

Oven Roasted Asparagus with Mushrooms

When we say we’re keeping things simple, we really mean it. Oven-roasted vegetables don’t need a lot of help. They’re wonderful whole foods on their own. For this delightful culinary treat, you’ll need about a pound of asparagus and about half a pound of mushrooms. Season with salt, pepper, garlic, butter, lemon juice, and red onion. Mix all, and roast at 425 degrees for 15-20 minutes.

Oven Roasted Buffalo Cauliflower

Time to experience one of the best summer evening dishes! This is easy, and it’s great with a healthy homemade pizza. (We like our pizza with a cauliflower crust. We’ll save that recipe for another day.)

Chop one head of cauliflower into florets. Mix melted butter, hot sauce, lemon juice, olive oil, and a little salt. Toss the florets in the mixture. Roast at 400 degrees for 20 minutes. Serve it hot with bleu cheese or ranch sauce. Try making your sauces with Greek yogurt. Lite and yummy!

Oven Roasted Summer Vegetable Medley

Okay. We decided to measure a bit for this recipe. You’ll need two cups of the following: broccoli florets, yellow squash, zucchini, mushrooms, and bell pepper. One red onion takes this medley to the next level.

Season with a couple of tablespoons of olive oil, garlic, and balsamic vinegar. Add a teaspoon of thyme, salt, and pepper. Toss the veggies in the seasoning. Roast them for 15 minutes at 425 degrees. This is a great side dish. And we won’t lie – we often eat it as our main dish. It’s that good.

Oven Roasted Hummus

This is the last of our roasted vegetable dishes. And we’ll have to be a bit more specific here. It calls for an eggplant, a red bell pepper, and a single bulb of garlic. Roast the eggplant and bell pepper with about half of the garlic (450 degrees for 30 minutes). Slice those peeled veggies into small pieces.

Next, add 4 cups of garbanzo beans to your food processor. Add the rest of the garlic pulp and roasted veggie pieces as well. For seasoning, you’ll need ¼ cup of lemon juice, and ⅛ cup of sesame tahini paste. Then you’ll need a half teaspoon of salt and smoked paprika.

Cover and process until blended. Then gradually add a cup of olive oil through the tube as you continue processing. Process until it’s smooth. Serve with more summer garden vegetables.
