In the vast sea of cookie choices, chocolate chip always wins as a fan favorite. Nancy took a break from baking our gluten free chili tarts and decided to whip up some chocolate chip cookies for the office. After spending the week taste testing batches of chili tarts we weren’t too enthusiastic about eating more sweets* – but after the delicious smell came wafting into the office it was too hard to say no.
*Just kidding, we’re always enthusiastic about sweets!
Chewy with a tiny bit of crunch, these cookies were made with Beetnik’s all purpose flour. Perfect for pancakes or cookies and used in all our our baked goods, our flour is the perfect gluten free addition to your pantry!
- 2 1/4 C Beetnik Gluten Free Flour
- 1 C butter, softened
- 3/4 C granulated sugar
- 3/4 C packed brown sugar
- 1 tsp vanilla
- 2 eggs
- 1 tsp baking soda
- 1 tsp salt
- 1 cup chocolate chips
Preheat oven to 350
Cream butter and sugar. Add eggs and vanilla and beat together. Combine dry ingredients and add to mixture. Stir until combined. Mix in chocolate chips.
Drop spoonfuls onto a parchment lined sheet. Bake for 10 minutes Enjoy!
