Top 5 Uses for Extra Herbs!

The sunshine has been working overtime this year! Our herb garden, despite frequent use, is starting to go wild! We have so many herbs, we almost don’t know what to do with them all! (Key word: almost) Do you have the same issue? Thankfully we’ve got some ideas about how to fix our abundant and thriving garden.

Simple Syrup

What a sweet solution! Simply add a bunch of herbs to a mixture of sugar and water (equal parts), bring it to a boil and swirl with a spoon. Remove from heat and strain when cool. Discard the herbs. Now you have yourself an excellent addition to cocktails, tea, flavored ice cube, etc. Add the syrup to ice coffee, sparking water, etc.

Pesto Time!

Keep it simple with this easy to memorize recipe: 2 cups basil, 2 cloves garlic, 1/4 cup pine nuts, 2/3 cups olive oil and of course, 1/2 cup pecorino cheese. Simply combine in a food processor and process! Add oil gradually. Viola! Pesto.

Home-made Vinaigrettes

We like to keep a jar of homemade vinaigrette in our fridge for quick salads and weeknight dinners –  the addition of fresh herbs always brightens our evening. If you have an abundance of chives, chop them finely and add to your mixture for use throughout the week.

Infuse Your Own Oil

Step away from the store-bought-fancy-pants oil! Infusing your own oil is so easy you’ll almost feel guilty each time you smugly tell your friends about your new hobby. Just add the desired amount of oil to a pan, add the herbs and then heat slowly. You want to use a basic olive oil, as we don’t want the two flavors completing. Strain into a fancy glass bottle and promptly post your new creation to Instagram your new creation. (#ImABeetnik!)

Do the Funky Chicken

And by “do the funky chicken” we mean take your herbs, chop em up and roast the heck out of a chicken! Simply chop them and combine with garlic, salt, and sugar for a quick and flavorful brine.
