Top Five Savory and Sweet Compound Butters

Compound butters are the blank check of the culinary world – and much like a blank check, almost everyone loves butter!

We love adding compound butters as a way to liven up our meal with special herbs, scents and flavors. Layer them on to your favorite grilled meats, fish and chicken. Compound butters work well on breads, muffins and toast, it’s a great way to add that extra touch to breakfast. Making compound butter can be a great activities to get the kids interested in, all they have to do is add the extra ingredients and mix! The opportunities are endless.

In order to start, assume you will need 2 sticks of unsalted, room temperature butter. Simply add the listed ingredients to the butter, chill for a couple hours and viola! Delicious compound butter to add to all your favorite Beetnik steaks! You can freeze your compound butter for later enjoyment, too!

Here are some of our favorite combinations:

Lemon Butter – pairs well with baked goods

  • zest of 3 small lemons
  • 1 tsp fresh lemon juice
  • 1tbsp sugar
  • add sprinkle of salt once mixed

Herbs and Garlic – pairs well with crusty bread

  • 3/4 cup flat leaf parsley, chopped
  • 1 chopped garlic clove
  • salt and pepper to taste

Paprika Butter – excellent on grilled corn on the cob

  • 1 tsp ground paprika
  • salt and pepper to taste

Anchovy & Chile Sauce – full of rich flavor, excellent with chicken

  • 2 anchovy fillets, chopped coarsly
  • 1 tbsp chile sauce (you can even use Nom Nom Paleos’s Sriracha recipe!)
  • 1 garlic clove, minced
  • sea salt to season

Chives and Ground Pepper – pairs well with grilled meats

  • 2 tbsp chives
  • 1 tsp ground pepper
  • Pairs well with grilled beef
