Wild Caught Halibut with Grilled Watermelon and Tomato Salad

This dish can be summed up in two words: summer personified. Our wild caught halibut was practically made to be grilled, as its thickness is perfect for flipping over coals. The smoky-sweet flavors of the grilled watermelon and tomato are perfect for those lazy summer days where you want something healthy, fresh and seasonal.


  • 2 Beetnik Halibut filets
  • 2 slices of watermelon per person
  • cherry tomatoes
  • olive oil
  • salt & pepper, to taste


Prepare your grill for the watermelon and tomato. Lightly oil the grates and then place the fruits on the grill. Let them sit until grill marks appear, roughly 2-3 minutes. (The tomatoes may take longer!) Once they are finished, set them aside and add the fish to the grill. We grilled it for 2-3 minutes on each side, checking for doneness with a fork. Slice the watermelon into pieces and toss with olive oil, tomatoes, mixed greens and salt and pepper.
