Wild Caught Sablefish with a Garlicky Herb Marinade

Often in the shadow of salmon, its more popular wild caught compatriot, sablefish deserves a bit of love this week! It’s known by a number of names, often referred to as “butter fish” or “black cod,” but we know it by one word and one word alone: delicious! It has a velvety, buttery texture and is high in good fats and Omega 3 fatty acids. Perfectly simple and quick, this marinade is sure to delight your weeknight dinner companions!
1/2 cup extra virgin olive oil
3 sprigs Italian parsley
2 sprigs fresh rosemary
2 sprigs thyme
1/4 tsp sea salt
1/2 tsp ground black pepper
2 cloves garlic
Combine the herbs, olive oil and salt and pepper. Add the sablefish. Marinate for up to 24 hours, but no less than 30 minutes. Turn the broiler on. Once ready, simply remove from the liquid and place on a foil lined baking sheet and broil for 3 minutes on each side.
