Wild Caught Salmon with Green Goddess Sauce and Lima Beans

Posted On: November 7, 2014

A combination of fresh herbs and yogurt, our chef’s Green Goddess sauce is a delicious compliment to any of our Wild Caught fish. It’s creamy texture brings out the richness , We paired it with our salmon and a side of organic lima beans.

Wild Caught Salmon with Green Goddess Sauce and Lima Beans

  • 2 Beetnik Wild Caught Alaskan Salmon fillets, thawed
  • frozen organic lima beans
  • 1 cup shredded cucumber
  • 1 cup greek yogurt
  • mix of fresh herbs
    • fresh tarragon, basil and Italian parsley
    • optional herbs: parsley, dill, chive

Preheat your oven to 300. Season your thawed salmon and place in the oven for 12-14 minutes. While it’s in the oven shred enough cucumbers to fill one full cup. Place a cup of greek yogurt into a food processor and blend it with your choice of herbs. We used fresh tarragon, basil and Italian parsley. Puree the combination until it turns a nice pale green color. Put the contents in a bowl and add the shredded cucumber, salt and pepper to taste and mix thoroughly.

We opted for frozen organic lima beans over fresh, as frozen legumes are much faster to prepare (and we were hungry!). Place the frozen  beans into a microwave safe bowl with a bit of chicken stock and heat them to your desired temperature.
