Wild Caught Salmon with Mustard & Lemongrass

Laying salmon on a bed of lemongrass, lemon and fresh herbs is a wonderful way to infuse it with rich flavors while keeping the fish tender. You can use any of your favorite herbs, but we chose lemongrass as our garden was overflowing!


  • 2 Beetnik Salmon filets (this also works well with sablefish!)
  • 1 lemon, thinly sliced
  • 25-35 sprigs mixed fresh herbs
  • 2 tbsp chopped herbs
  • 1/4 tsp salt
  • 1 tbsp dijon mustard
  • 1 clove mashed garlic


Preheat your grill to medium high. Lay two pieces of heavy duty foil on a baking sheet and place the lemon slices in the center. They will act as a bed for your lemongrass and herbs.

Add the lemongrass and herbs. In a separate bowl, add garlic and salt. Stir in the mustard and chopped herbs. Mix well. Spread over the salmon and place the fish on the lemongrass. Transfer the foil to the grill and let cook until opaque in the center – start checking at minute 15. It can take up to 24 minutes. Serve immediately!
